Gobhi Paratha

Paranthas and guys have a lifelong relationship ! Mostly all guys love paranthas ... My friend Kiki asked me to do a recipe post on gobhi parantha as her hubby loves it .. I was waiting for the right moment to do this post. My hubby's naniji(grandmother) is staying with us for a few days and I must tell you she is a wonderful cook and makes awesome parantha, so I thought I should ask the great chef naniji to share her recipe :)


Serves - 4-5 paranthas
Cooking time- 10 mins

Ingredients-
Cauliflour-1, grated
Ginger - little bit, grated
Green Chillies-2, finely chipped
Ajwain- 1 tsp
Anardana powder- 1tsp
Salt-as per taste
Black pepper-1tsp
Red chillies-1/2 tsp
Wheat dough
Desi Ghree- 2 tbsp

Step my step recipe
Grate cauliflower , ginger and chop chillies.


Mix all the ingredients - salt,red chillies, ajwain and anar dana.



Make a roti and fill the stuffing , make sure you add more stuffing so that it tastes better.

try to secure the ends of dough like a Potli , btw thats naniji's hand :)


Put in a dry wheat and make a round shape with the help of belan, now put it on tawa, cook it on low flame for better and crispy taste. Add desi ghee while cooking the parantha on both the sides.


Cook it till its golden brown .

Can be served with Curd , lassi , white butter or yellow butter and green mint chutny.

I love my parantha with the butter....




Naniji make the best parathas in the world , I can be eating these paranthas in my dream too .... hehehhee

Polka Dot Look !

Friendship signifies the greatest bond of love , you can share anything & everything with your close friend...Friends are like angels in your life ! Social media at times can do wonders ! Thanks to twitter I found a BFF in Purvi <3. She is a darling ! We are always on what's app sharing whats happening around ... joy & sorrow ... This blog post is dedicated to Purvi, my new BFF  :)
In very short span of time we have become best of friends ...She teaches me all the Gujrati dishes which I always thought were impossible to make ! Wow , you are a rockstar Purvi !!

Purvi sent me a goodie bag from Mumbai <3, she sent me lipstick , earrings and statement necklace.
Anytime I get new things I just have to wear them like ASAP !! heheheee...
We had kitty on weekend so decided to wear the statement necklace with a casual look , so that the necklace highlights !

Kantha Kurta my way !!

Kantha is one the oldest embroidery form from Bengal , I still remember how much I enjoyed doing this way back in school & NIFT as this is the simplest form of embroidery. Recently I have started doing garments customization , well it was always been my passion and after giving up from job I thought I will concentrate on my designing skills full time. I enjoy doing this & it keeps me content and occupied.I don't run a proper boutique shop where ladies come & ask you to do stuff for them. My concept of working is very different I like to connect to my clients , understanding their requirements and then designing for them accordingly.Now that I am already doing it I am get tempted to try new things, can't help it I am greedy woman !! Lolz ...

We have this concept of couple kitty among cousins so I had a reason to get dressed !
It was on weekend and this is what I wore .....

Recipe : Kadhai mix veg

Serves-4-6

Cooking time-25 mins

Ingredients-
Onion-2
Bitter Melon( karela)- about 5-6 small ones
Baby potatoes- about 10-15
Ladyfinger- about 50 gms
Baby eggplant - about 5-6
Gram flour -about 1/2 cup
Mustard oil- about 1 1/2 tbsp
Dhania powder - 2 tsp
salt- as per taste
Turmeric- 11/2 tsp
Amchur- 1 tsp
Sauf powder-1 tsp
Red chillies- 3/4 tsp
Garam Masala- 1 tsp

Step by step recipe-

Peal the bitter melon( I have used baby bitter melon in my dish  , you can opt for the normal size too).Cut it from centre partially but dont completely cut it.

Cut the egg plant into half ( btw these are from our kitchen garden :) )

 Cut the ladyfinger into half partially just like bitter melon.

 Slice the onions.

Wash the baby potatoes nicely and dry them.


In the gram flour mix the pealed remains of bitter melon , add a little salt and water. Mix the consistence the same way you make pakoras.


Make small balls of this mixture and fry that in mustard oil in a kadhai.



When the balls are fried take them aside and add the bitter melon, fry it for about 3-4 mins till they turn a little brown.



Now add the baby potatoes, and keep stirring for about 5 mins.

Now add the balance vegetables except for onions ,mix it well and keep starring it for 5 mins.

 

Now add the pototoes and the pakodas in the mixture and also add the spices that includes salt , sauf powder, turmeric , red chillies and garam masala.

Cover the kadhai with lib and on low flame cook if for about 10-15 mins.


This is how the final dish looks like :)
